Blondie with Bubbles! You’ll be fizzing about this addition to the Wooing Tree family – a bubbly sister to the popular Wooing Tree Blondie & Co. 60% Pinot Noir and 40% Chardonnay in a new style. Fresh, fragrant and full of sparkle.
The elegant champagne colour resulted from minimal skin contact prior to a gentle whole bunch press. The juice was initially fermented in stainless steel to retain the varietal and fruit characteristics for the primary fermentation. This base wine then went through a secondary fermentation in a pressurised tank before dosage (sugar addition) to retain the right balance of sweetness and acidity.
This wine shows beautiful aromas of florals, pear and melon with a hint of hazelnut, with stone fruit, citrus and rock melon on the palate. A lovely balanced palate leads to a medium soft mousse and long citrus finish. Best served slightly chilled.
