The juice was fermented in stainless steel to retain the varietal and fruit characteristics. The ferment was then stopped to retain a residual sugar of 130g/l. This wine shows delightful aromas of pink grapefruit, mandarin and turkish delight with honey, pear, pineapple and a citrus finish on the palate. Blondie with Bubbles! You’ll be fizzing about this addition to the Wooing Tree family – a bubbly sister to the popular Wooing Tree Blondie.

100% Central Otago Pinot Noir in a new style. Fun flirty and full of sparkle. The elegant champagne colour resulted from minimal skin contact prior to a gentle whole bunch press. The juice was initially fermented in stainless steel to retain the varietal and fruit characteristics for the primary fermentation. This base wine then went through a secondary fermentation in a pressurised tank before dosage (sugar addition) to retain the right balance of sweetness and acidity. This wine shows classic Blondie characteristics of pear, white peach, hints of honeysuckle on the nose with stone fruit, pink grapefruit and rock melon on the palate. Fresh, fragrant and full of sparkle. The elegant champagne colour resulted from minimal skin contact prior to a gentle whole bunch press. The juice was initially fermented in stainless steel to retain the varietal and fruit characteristics for the primary fermentation. This base wine then went through a secondary fermentation in a pressurised tank before dosage (sugar addition) to retain the right balance of sweetness and acidity. This wine shows beautiful aromas of florals, pear and melon with a hint of hazelnut, with stone fruit, citrus and rock melon on the palate.
