Blondie with Bubbles! You’ll be fizzing about this addition to the Wooing Tree family – a bubbly sister to the popular Wooing Tree Blondie & Co.

  Tasting Notes Blondie with Bubbles! You’ll be fizzing about this addition to the Wooing Tree family – a bubbly sister to the popular Wooing Tree Blondie & Co. 60% Pinot Noir and 40% Chardonnay in a new style. Fresh, fragrant and full of sparkle. The elegant champagne colour resulted from minimal skin contact prior to a gentle whole bunch press. The juice was initially fermented in stainless steel to retain the varietal and fruit characteristics for the primary fermentation. This base wine then went through a secondary fermentation in a pressurised tank before dosage (sugar addition) to retain the right balance of sweetness and acidity. This wine shows beautiful aromas of florals, pear and melon with a hint of hazelnut, with stone fruit, citrus and rock melon on the palate. 100% Central Otago Pinot Noir in a new style. Fun flirty and full of sparkle. The elegant champagne colour resulted from minimal skin contact prior to a gentle whole bunch press. The juice was initially fermented in stainless steel to retain the varietal and fruit characteristics for the primary fermentation. This wine shows classic Blondie characteristics of pear, white peach, hints of honeysuckle on the nose with stone fruit, pink grapefruit and rock melon on the palate. The development of Wooing Tree vineyard created a few sandstorms of its own. Especially low yielding ripe hand picked fruit, gentle winemaking and extended maturation in French oak have resulted in a complex and powerful wine.  It has aromas of red berries, violets, and fruitcake with a hint of spice. Ripe berry, smoky plum, cherry and dark chocolate show on the palate with a long sweet fruit finish.
